I love salmon but getting my kids to even consider eating it is a tall order. We've tried a few different salmon recipes until we found this one, kid tested and approved! It's baffling considering how few ingredients this recipe has, how easily it comes together, and how little time I need to spend in the kitchen. It's a mom-win! Serve it over rice and a bit of soy sauce, the kiddos will be gobbling it up in no time. I personally like to add some roasted veggies or use this in a salad. Yummy and versatile!
Ingredients:
1 1/2 lbs salmon, cut into 4 pieces
2 tsp pureed ginger
1 tsp garlic powder
3 tbsp soy sauce
1 tbsp oyster sauce
2 tbsp honey
1 tbsp sesame oil
Pinch of salt
1/4 tsp white or black pepper
Instructions:
In a mixing bowl, combine ginger, garlic powder, soy sauce, oyster sauce, honey, sesame oil, salt, and pepper. Mix well.
Put the salmon pieces into a large ziploc bag and pour the marinade in. Make sure all the salmon pieces are coated. Marinade the salmon in the refrigerator for at least 2 hours, but overnight is best.
Preheat the oven to 375 and line a baking sheet with aluminum foil.
Place the salmon pieces (shake off the excess marinade) in a single layer onto the lined baking sheet and bake for 12-15 minutes. If the albumen (white substance in the salmon) start to seep out, that means the salmon is overcooked. You want the salmon to be flaky but not overdone.
If you like a bit of char on your salmon, bake for 10-12 minutes then set it on broil for 2 minutes, being careful not to burn.
Serve immediately.
